You and Jennifer K both have what is called "oral allergy syndrome". It is characterized by a contact dermatitis reaction to raw fruits and vegetables. You would also react in your mouth if you chewed it up and spit it out again, wouldn't you? It is linked with pollen allergies.
I used to have it too. I was also allergic to raw: carrots, lettuce, celery, oranges, watermelon, bananas, cantalope, and several others. I went to an allergist and got desensitation shots for my pollen allergies. After 5 years of being on the shots, my allergy to raw fruits and vegetables went away! Now I can even eat a salad. I can get watermelon juice on my hands without breaking out in a rash.

I have to say, I've never heard of anything like a potato allergy before! And the three items just don't have a lot in common. So - other things: could you be washing them all in water that contains something that disagrees with you? Are you cutting them up with a new knife, or on a new surface, or putting them on a new plate? Are they all from the same store or farm or other source that might have put something on them (insecticide, anti-bacterial agent to keep them from spoiling)? Are you taking any medication that you have only recently started taking, or using anything on your skin? Is there anything that you're handling that's new. Could they be from a place that uses diatomaceous earth in some way (it's a "natural" insecticide that has many characteristics of seafood allergies). Your reaction sounds a LOT like either seafood allergies or penicillin allergies; how that might be connected to the foods, I don't know. Is sea salt in the picture ANYWHERE?
I know it's a long shot, but those are SO different. One is a true root vegetable, another is a tuberous root, and the third is a fruit, botanically speaking.
One way or another, avoid them until you know what's causing the problem. Many allergens "build up" in your system. If you have ANY problems beyond mild swelling, get to an ER/Urgent Care facility.

I'm allergic to all of these things too. I get Zoloph shots once a month for it. I also take Atrax pills and when it gets bad Prednosone. I also carry an "Eppi pen" for emergencies.
You should see an allergist for this if you haven't already, Being allergic to these things, I would guess the allergies go much further, you could have a serious attack if it's not under control.

i have allergic reactions to raw potatoes, tomatoes, apples, strawberries, pineapples and some other fruits and veggies, but only when raw. i don't know about carrots though. i just avoid these things. unless i have to cut potatoes then it's unavoidable and my hands get swollen and very itchy
